While getting his degree in biochemistry, Justin Wong (founder and creator of Kaffa!) decided to pursue his passion for fine coffees and teas, which took him on trips around the world: six months to northern Italy (specifically Milan, Trieste, and Florence), where he learned to make the unique espresso drinks we serve at Kaffa!

Then there was the 5 months in Australia, followed by short trips to South America (Panama, Mexico and Guatemala) and Hawaii to learn how coffee is cultivated. Tea was still the beverage of choice in China when he was there last in 1997, but that's changing fast, thanks to "The Big S."

But there are many big differences between us and those big companies. For example, because we are a small business, locally owned and operated, we personally micro-roast our beans for maximum flavor and freshness.

There's a big difference in our beverages, too.

You'll notice that our cappuccino doesn't have a lot of foam on top. That's because Kaffa! cappuccino is true to the origin of the beverage, which was named after the Cappuccine monks who drank it to help them remain alert through their long chants. This style of cappuccino is still served throughout Italy, in six-ounce cups, with espresso shots pulled "ristretto" style, complemented by milk steamed to a perfect texture.

We serve this same recipe in eight-ounce cups with our trademark "heart" on top (try that, Starbucks!).

Yes, our cappuccino "tastes different," because the result is a rich, flavorful infusion of espresso and steamed milk with a creamy quality that is soft and rich on your palate.
